GRILLED CHICKEN & PEACH SALAD
Ingredients
1 large chicken breast or 2 smaller ones
1 Tbsp. olive oil
2 tsp. The Perfect Blend Seasoning
2 tsp. Mango Chili Lime Seasoning
1 Tbsp. olive oil
1 cup goat cheese, crumbled or cubed
2 peaches, pitted and each cut into 6 wedges
1 cup blueberries
5 cups salad greens
Classic Steakhouse Vinaigrette & Marinade
Instructions
Brush some olive oil on the grill grates. Place chicken breasts on the hot side of the grill (or on a grill pan). Let the chicken grill, undisturbed, until the pieces start getting some grill marks. When the chicken pieces have browned on one side, turn them over, and move them to the cooler side of the grill on low heat. Cover, and let them finish cooking. Remove chicken from grill when the internal temperature of the chicken reaches 165°F. Place the greens in a serving bowl and toss with dressing. Arrange peaches, blueberries, goat cheese and cooled chicken on top (chicken can be prepared and refrigerated a day in advance of serving).
